Harvest is a wonderful time of year when fresh local produce is plentiful for making preserves to last throughout the year. Here are my 5 tips for perfect preserves:
- Use fresh produce. It does not have to be perfectly shaped, but bruise and rot free. Quality matters to the end product.
- Sterilize your new jars and lids well before starting, making certain you have the correct number for the batch.
- Follow a recipe from a good source, such as a preserving company. Don't alter or adapt the recipe!
- Timing: Have a clock with a clearly visible second hand to time the boils, or a thermometer (if the recipe calls for it). Don’t rush any natural thickening if the product needs to boil down. Relax.
- Use a good solid bottom pot that is large enough for your recipe to boil without overflowing on your stove.
